TEA LAB
茶空間

Designed with a long-form tea bar and natural stone walls, TEA LAB offers a calm, introspective setting for tea appreciation. The space seats up to 16 guests in a shared experience that blends contemporary aesthetics with the spirit of Eastern tea rituals.

The entire tea experience is curated in collaboration with Angela Chang, Taiwan’s first dedicated tea sommelier in a Michelin-starred restaurant and founder of AINSI THÉ, the brand behind TEA LAB.

Angela specializes in using tea as a sensory language—designing seasonal tea menus and tasting rhythms that create a layered dialogue between aroma, flavor, and the dishes they accompany.

Her thoughtful service turns each cup into more than just a beverage—it's a sensory journey that connects sight, scent, taste, and feeling.

Mindful Brewing

A return to essence — distilling focus into every cup of tea Each cup is personally brewed by our tea master, who carefully controls water temperature, pouring rhythm, and steeping time to honor the precise moment when tea leaves meet water. From the unfurling of the leaves to the release of aroma, and finally the first sip — it is a quiet, refined ritual, a dialogue between tea and self.

This is more than drinking tea. It is a mindful practice — a moment of inward stillness guided by the essence of the brew.

Tea Pairing Experience

A new interpretation of tea — the spirit of Chinese tea ceremony meets refined Western small plates Tea and food come together in a creative dialogue of flavors. Co-developed by AINSI THÉ and the YMS culinary team, this pairing experience blends the quiet philosophy of Chinese tea rituals with delicate Western savory and sweet bites, offering a fresh reimagining of the modern tea table.

Each dish is inspired and guided by the tea itself — echoing its aroma, balancing its notes, and unfolding in layers. This is not merely a pairing, but a culinary expression born from the fusion of traditions.

Curated Tea Selection

Savor the seasons and terroir of Taiwan through tea In collaboration with Taiwanese tea brand AINSI THÉ, we present a curated tea selection ranging from the crisp vibrancy of high mountain single-bush teas to the deep, roasted elegance of slow-fired varietals — each capturing the essence of Taiwan’s seasonal landscapes and terroir. Every tea is a sensory journey, an intimate conversation between land and palate.
